André Kaestler

パリ生まれ。14歳からキッチンに立ち、ミシュランの星を持つシェフのもとで修業を積んだ後、22歳にしてパリのレストランでシェフに就任。フランス本土にとどまらず、イタリア、シチリア、ボラボラ島、ニューカレドニア、オーストラリアと世界各地で腕をふるい、東京では神楽坂・銀座で14年間活躍。「俺のフレンチ」の立ち上げに尽力した。

2023年末、伊豆高原に移り、Bon'Apのシェフとして新たな章をはじめる。 Born in Paris, André entered the kitchen at 14 and trained under a Michelin-starred chef before becoming head chef at a Parisian restaurant at just 22. He went on to work across Italy, Sicily, Bora Bora, New Caledonia, Australia, and Tokyo — where he spent 14 years at leading restaurants in Kagurazaka and Ginza, playing a key role in launching "Oreno French."

In late 2023, he made his way to Izu Kogen, where he now leads the kitchen at Bon'Ap.
